Eggless Spiced Carrot Muffins | how to make eggless carrot walnut muffins 

These spiced carrot muffins are perfect to serve and enjoy with a cup of tea/coffee. We have already shared the recipe for Eggless Carrot Walnut Cake.

We have modified the recipe a bit and also added spice powders to the batter to make these these muffins even more flavourful and interesting.

For the spice powders, we have added cinnamon powder and all-spice powder. All-spice powder is a combination of cinnamon, clove and nutmeg powder. The proportion of nutmeg powder is less as compared to the other two. If you do not have all-spice powder, you can mix all the three powders and use as required.

For the crunch, we have added chopped walnuts. You can also add raisins to the batter. You can serve these muffins warm or at room temperature.

Tips and Suggestions to make perfect Eggless Carrot Muffins :

  1. Baking time depends on your convection. We suggest you remain alert after 35 minutes. If the cake does not get ready after 35 minutes, you may bake for a few more minutes.
  2. Either grease the tin with oil/butter and dust it with wheat flour. Second way is to spread oil/butter and then line it with parchment paper/baking sheet. Read our step-wise procedure on How to Grease a Cake Tin – 2 ways
  3. All the ingredients to be used, should be at room temperature.

Ingredients (1 cup = 240 ml) 

US Customary - Metric

Dry Ingredients

  • ½ cup whole wheat flour/gehun ka atta
  • ½ cup all-purpose flour/maida
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • pinch of salt
  • ½ teaspoon cinnamon powder/dalchini powder
  • ¼ teaspoon all-spice powder

Wet Ingredients

  • ¼ cup oil
  • 2 tablespoon butter
  • ⅓ cup curd
  • ⅓ cup milk
  • ⅓ cup powdered sugar
  • 1 teaspoon vanilla essence
  • ½ cup heaped grated carrots
  • ¼ cup walnuts roughly chopped

Instructions
 

  • Preheat the oven to 180 degrees Celsius for 10 minutes.
  • In a wide bowl, take oil, butter, milk, curd, vanilla essence and powdered sugar. Whisk well with a beater until light and fluffy. Give a good whisk till sugar gets completely dissolved.
  • Sift wheat flour, maida, baking powder, baking soda, salt, cinnamon powder and all-spice powder together in a bowl.
  • Add all the dry ingredients and mix gently. Do not over-mix.
  • Now add grated carrot and chopped walnuts & fold the mixture gently.
  • Line a muffin tray with paper muffin liners.
  • Pour the batter into them. Make sure you do not fill them completely. Just pour the batter till they are filled 3/4th.
  • Bake at 180 degrees Celsius for about 20-25 minutes. Be alert and check after 20 minutes. Baking time will vary for every convection.
  • Remove from the oven. Serve warm or at room temperature.
  • Serve and enjoy these yummy spiced carrot muffins.
