Minestrone Soup | Italian Vegetable Minestrone Soup Recipe

Minestrone Soup is a one-pot soup that is full of flavours and is loaded with vegetables, plus it has pasta and rice. This is a very filling soup and you can comfortably skip your dinner after you have one bowl full of this soup.

For the veggies, you can add any of the available vegetables but we would recommend you don’t skip celery and zucchini. Celery gives a nice flavour to the soup.

Serving Suggestions

The soup goes really well with garlic bread (or cheesy garlic bread).

You can also accompany it with pizza or pasta.

There can be many variations and modifications to the recipe. We have shared some of the variations below:

Tips and variations for making Minestrone Soup :

  1. We have used red kidney beans (rajma). You can also use black eyed beans or any other beans.
  2. If you do not prefer pasta, you can add rice too.
  3. For the pasta, we have added penne pasta. You can use any variety. Any of the tiny pasta varieties goes well with the soup.
  4. While cooking the soup, you can add parmesan cheese.
  5. Adjust water level and seasonings based on your choice and preference.

Ingredients (1 cup = 240 ml) 

US Customary - Metric
  • 1.5 tablespoon olive oil
  • 2 garlic cloves finely chopped
  • 1 medium sized onion finely chopped
  • 1 medium sized carrot washed, peeled and cut into small cubes
  • 1 medium sized potato washed, peeled and cut into small cubes
  • ½ - 1 zucchini cut into cubes
  • 2-3 celery stalks chopped
  • ¼ cup corn
  • ¼ cup cooked red kidney beans/rajma you can use black eyed beans or any other beans
  • 2 big tomatoes pureed
  • 1/8 cup pasta
  • 2.5-3 cups vegetable stock/water
  • ¼ teaspoon dried basil
  • ¼ teaspoon oregano
  • ¼ teaspoon black pepper or to taste
  • salt to taste

Instructions
 

Pre-Preparation:

  • Wash and chop all the veggies.
  • Puree tomatoes.
  • Cook beans. Pressure cook on high flame till 1 whistle, reduce the flame and cook for about 10-15 minutes or till done.

Preparing Soup

  • Heat olive oil in a pan and add chopped garlic and onion. Saute for 3-4 minutes on medium flame.
  • Now add carrot and potato cubes. Mix and saute for 2-3 minutes on medium flame.
  • Then add zucchini, celery and corn. Mix and saute for 1-2 minutes on medium flame.
  • Add cooked beans, pureed tomatoes, about 2.5 cups water/stock, salt and pasta. Stir well, cover and cook for 10 minutes on medium flame.
  • Open the lid, stir and add dried basil, dried oregano and pepper powder. At this stage check the consistency and add water if required. Again cover and cook for 15-20 minutes or till pasta and potatoes are cooked.
  • Soup is ready. Serve.

    If there is one soup apart from tomato that I can have everyday, its Minestrone. Blame it on my love for all things Italian or the simple fact that this soup is filling and full of veggies. Gorgeously done. This is a perfect meal by itself.

    My all time favorite especially when it gets a little cold here. Though it never gets that cold as we never need sweaters. However that doesn’t stop me from making soups. Your soup bowl looks so comforting and wholesome.
