
Eggless Banana Cake | Eggless Banana Walnut Cake Recipe
When we buy a bunch of ripe bananas, many times it happens that last 1-2 bananas gets over-ripe and we need to finish it off quickly. So the best option is to make this super moist eggless banana cake. So if you have over-ripe bananas at home, it’s kind of a boon for this recipe. The riper the bananas, the tastier and flavourful this cake will turn out to be.
We have used half maida and half whole wheat flour in this recipe. If you want, you may prepare this cake using maida or wheat flour in full proportion. We have also added chopped walnuts, as banana and walnuts goes really well.
This is a simple and quick-to-assemble tea-time cake. Also a great option to serve for hi-tea or to include in your brunch menu.
Serving Suggestions
- Serve plain – at room temperature or warm (micro for 10-20 seconds)
- Warm in microwave for 10-20 seconds, put a scoop of vanilla ice cream, drizzle chocolate sauce and top it with mixed chopped nuts and serve.
- Sprinkle icing sugar on top and serve.
Some Tips and Suggestions to make the BEST Eggless Banana Cake:
- Baking time depends on your convection. We suggest you remain alert after 30 minutes. If the cake does not get ready after 30 minutes. Set the time for 30 minutes first. Then check and decide the time.
- Either grease the tin with oil/butter and dust it with wheat flour. Second way is to spread oil/butter and then line it with parchment paper/baking sheet.
- All the ingredients to be used, should be at room temperature.

Eggless Banana Cake | Eggless Banana Walnut Cake Recipe

Ingredients (1 cup = 240 ml)
- ½ cup whole wheat flour/gehun ka atta
- ½ cup all purpose flour / maida
- 2 ripe bananas
- ¼ cup walnuts roughly chopped
- 1/3 cup powdered sugar
- 1/3 cup oil
- 1 tsp baking powder
- ½ tsp baking soda
- pinch of salt
- 1 teaspoon vanilla essence
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 180 degrees Celsius for 15 minutes.
- Sift wheat flour, maida, baking powder, baking soda and salt together in a bowl. Keep it aside.
- In a wide bowl, add chopped bananas and mash them with the help of a vegetable masher. Alternatively, you can also puree them in a mixer/blender.
- To it add oil and powdered sugar. Whisk well with a beater until light and fluffy.
- Now add lemon juice and vanilla essence and mix well.
- Add the flour mixture gradually and gently stir until everything gets mixed well.
- Add chopped walnuts and fold the mixture gently.
- Pour the batter into a greased cake tin.
- Bake at 180 degrees Celsius for about 35-40 minutes. First set the time for 30 minutes. Be alert and check after 30 minutes. Then bake for a few more minutes. Baking time will vary for every Convection.
- Remove from the oven insert a toothpick into the middle of the cake. If it comes out clean, cake is ready. If it doesn’t come out clean, bake for a few more minutes.
- Let it cool completely. Remove on a plate.
- Serve and enjoy this yummy Banana Walnut Cake.
