
Sama ke Chawal ki Kheer | Samvat Rice Kheer | Vrat ke Chawal ki Kheer
Sama ke chawal are also known as barnyard millet or samo/moraiyo. This kheer is especially made during fast/vrat. Sama rice gives the same texture and feel as the normal rice. But, they are more healthy as compared to rice in many ways :
- high on calcium, potassium, phosphorus and amino acids
- rich source of vitamins and minerals
- contains high digestible fiber
What is Sama rice ?
Sama Rice is known as Barnyard Millet in english.
In regional languages, it is known as – Samo rice, Samak rice, Mordhan, Vrat ka Chawal, Vari Cha Tandul, Bhagar or Kodri, Jungle rice.
Sama rice is not rice, but a gluten-free, fibre-rich, and nutritious tiny, round, cream-coloured grain, that is smaller than the rice grain and sago pearls and slightly bigger than sooji (semolina).
You can substitute this grain in many dishes that contains rice, like pulao and khichdi. This also has a texture similar to that of sooji/rava/semolina. So just as you make upma, you can add in your favourite veggies and make vegetable samak rice upma/pulao.

Ingredients (1 cup = 240 ml)
- 1 litre milk
- ½ teaspoon ghee ¼ teaspoon ghee for brushing pan + ¼ teaspoon ghee for adding to sama ke chawal
- ¼ cup sama ke chawal/barnyard millet
- ½ cup sugar
- generous pinch of saffron strands soaked in 1 tablespoon milk
- 1 teaspoon cardamom/elaichi powder
- ½ teaspoon jaiphal/nutmeg powder
Instructions
- Wash sama ke chawal and soak them in enough water for 15-20 minutes.
- Brush a thick bottomed non-stick pan with about ¼ teaspoon ghee. Add milk to it and bring it to a boil. Keep stirring occasionally so that the milk does not stick to the bottom of the pan.
- Drain the water from the chawal and add ¼ teaspoon ghee to it and mix.
- Once cream separates from milk, stir well and add sama chawal+ghee mixture to milk. Stir well and cook for 5-6 minutes or till chawal gets completely cooked.
- Then add sugar and cook for another 2-3 minutes.
- Add saffron soaked in milk, stir well and remove from flame.
- Transfer kheer to a bowl and add nutmeg powder and cardamom powder. Mix well.
- Serve the kheer hot, warm or chilled.
