About This Recipe

This Roasted Tomato Soup is an easy to prepare soup. Most of the soup recipes calls for blanching of tomatoes or pressure cooking them. But this is an easy peasy soup recipe where you can roughly chop tomatoes, onion and garlic and keep in the oven for baking. This is the only pre-preparation required for this recipe. Even you can do this step in advance and keep ready. Once this cools down, just blend, heat and season with your favourite spices and herbs.

Roasting gives a very nice flavour and aroma to soups. We have already shared Roasted Carrot Soup Recipe. We have drizzled olive oil while roasting, but if you wish you can use any other cooking oil (preferably use odourless cooking oil).

This soup is Gluten-Free and Vegan. Serve it with these yummy Garlic Breadsticks.

What type of tomatoes are best for soup?

For preparing any soup, always choose fresh vegetables and herbs. Say for example if you are making Sweet Corn Soup, choose fresh corn instead of frozen corn. For Tomato soup, choose fresh red ripe tomatoes, leading to a sweet, rich tomato soup flavor. Avoid using slightly stiff or green tomatoes.

How can I make tomato soup taste better?

As compared to the usual tomato soup, this tomato soup is prepared by roasting tomatoes, onion and garlic with olive oil and salt. Roasting gives a very nice flavour and aroma to soups. For an enhanced taste, add a dash of fresh cream or chopped fresh basil leaves.

How to make Roasted Tomato Soup without oven?

If you want to make this soup without oven, then heat olive oil in a pan and add roughly chopped garlic, onions and tomatoes. Keep stirring and saute on a medium high flame till everything becomes soft. Once done, add salt and switch off the flame. Proceed with the rest of procedure as mentioned in the recipe.

Step by Step Recipe 

  • Roughly chop onions, garlic and tomatoes.
  • In a baking tray, add onions, garlic and tomatoes. Drizzle olive oil and sprinkle salt over them and stir.

  • Bake at 200 degrees Celsius for about 40-45 minutes till everything is roasted well. Stir after 15-20 minutes.
  • Remove from oven and let it cool.
  • Once cooled, transfer to a mixer/blender jar along with all the juices and oil from the tray.

  • Transfer puree to a pan and bring to a boil. Adjust salt and add pepper powder to taste.
    Switch off the flame and serve.

How do you thicken tomato soup without cream?

To thicken your soup without cream, add 1/2 mashed potato while blending. About 1 teaspoon corn starch mixed with little water (corn flour slurry) can also be added to thicken soup. After adding corn flour slurry, boil the soup for 3-4 minutes.

How do you fix bland tomato soup?

You can add any of your favourite herbs like oregano, chili flakes or mixed herbs. Fresh basil leaves gives a nice aroma and flavor to the soup. For a spicy punch, add ground black pepper.

When should you add cream to soup?

Boil the soup first and then add cream in the end. After adding cream, do not boil the soup. Just re-heat till hot and serve.

Can you freeze soup made with cream?

You can freeze cream soup, but soups that has cream added have higher chances of flavor and texture changes when frozen and defrosted. Also, do not boil the soup after freezing. Let it come to room temperature / defrost and then re-heat till it is hot.

Ingredients (1 cup = 240 ml)

  • 8 medium tomatoes
  • 7-8 garlic cloves
  • 1 medium sized onion
  • ½ – 1 cup water or vegetable stock (adjust as required)
  • 1 tablespoon olive oil
  • salt to taste
  • black pepper powder to taste

Instructions
 

  • Roughly chop onions, garlic and tomatoes.
  • In a baking tray, add onions, garlic and tomatoes. Drizzle olive oil and sprinkle salt over them and stir.
