Some of the tips to keep in mind while making homemade sweet potato chips recipe:

1. As soon as you slice the sweet potatoes, directly soak them in a bowl of water. Otherwise slices will turn black.
2. Fry the sweet potato slices batch-wise. Do not overcrowd the oil.
3. Heat oil on a high flame and once you add first batch of chips to it, reduce the flame to medium to get crisp wafers.
4. Only remove that much chips from water that you want to fry.
5. Before adding chips to hot oil, make sure they are completely dry, otherwise oil will splutter.
6. Sprinkle spices on them as soon as you remove them from oil. Do not wait for other chips to be fried.

Ingredients (1 cup = 240 ml)

US Customary - Metric
  • 2 sweet potatoes/shakarkandi
  • salt to sprinkle on chips
  • chaat masala to sprinkle on chips
  • oil for deep frying
  • water for soaking sweet potato slices

Instructions

  • Wash the sweet potatoes. Trim their edges and peel them.
  • Slice the sweet potatoes through a slicer. Directly soak them in water to avoid de-colorisation.
  • Once all the potatoes are sliced, heat oil for deep frying chips.
  • We have to fry the chips in batches. Drain the first batch of chips and dry them on an absorbent paper, so they get completely dry and water does not splutter while frying.
  • When the oil is hot, add our first batch of chips one by one.
  • Reduce the flame to medium while frying the chips. Fry till crisp and light golden in colour. Place them on an absorbent paper to drain excess oil.
  • Sprinkle salt and chaat masala over the first batch.
  • We need to make chips batch-wise here. We have to sprinkle salt and chaat masala over them when they are hot, otherwise chips won’t be properly coated with spices.
  • Now repeat the same steps to fry the remaining batches.
  • Store these crispy homemade fresh Sweet Potato Chips in an air-tight container and enjoyyyyy.
