Raw Banana Chivda (Kachche Kele ka Chivda)

A sweet and sour chivda or namkeen mixture made from grated raw bananas and flavoured with spices and sugar. You can also consume this chivda during vrat or fast. If you are consuming this for fast/vrat, then you can replace regular salt with sindhalun salt, that is specially used for faraal or vrat ka khana.

The only tricky part of the recipe is to directly grate the banana into hot oil. We do this because if we grate the banana in advance, they will turn black and grated banana will stick to each other because of the presence of starch in them. So when we directly grate them in hot oil, the grated strings will remain separate and our chivda will turn out crisp and crunchy.

Raw banana or plantain can be used in a variety of dishes like stir fry, kofta, cutlets, curry, snacks (wafers, sev, chivda namkeen). The list is endless.

You will have to forget about the calories for this indulgence. Most of the ingredients of this chivda are deep-fried. If you want to cut on some calories, you can dry roast peanuts, cashews and almonds instead of deep frying.

So we are describing 2 methods to make this chivda. The first method has everything deep fried in it. In the second method, we have tried to cut on some calories. Do let us know which way you liked the most.

Ingredients (1 cup = 240 ml)

US Customary - Metric
  • 2 raw banana/kachche kele
  • 1/3 cup peanuts
  • 8-10 curry leaves
  • 1-2 green chillies finely chopped
  • 1 tablespoon raisins
  • 5-7 cashews
  • 5-7 almonds
  • ¼ teaspoon red chili powder
  • 1 teaspoon powdered sugar
  • 1 teaspoon chaat masala
  • salt to taste
  • oil for frying

Instructions

  • Heat oil in a frying pan/kadhai.
  • Wash and peel the bananas. Directly grate the bananas into hot oil. Fry in batches. Peel only that much portion of banana that can be fried at a time. Do not overcrowd the oil.
  • Let them fry on low to medium heat and keep turning until they turn golden brown and crisp. Drain on an absorbent paper and set aside.

Method 1

  • In the same frying pan, fry peanuts, cashews and almonds till they turn light golden brown. Keep aside.
  • In the same manner, fry green chillies and curry leaves. Fry till they turn crisp and all the moisture evaporates from them.
  • In the end, fry raisins. Be careful while frying raisins, as they burn quickly. Fry only for a few seconds.
  • Combine fried grated banana, peanuts, cashews, almonds, raisins, green chillies and curry leaves in a wide bowl.
  • Add salt, red chilli powder, chaat masala and powdered sugar to it. Mix well.

Method 2

  • In a non-stick pan, dry roast peanuts, cashews and almonds till they turn light golden brown and crisp. Keep aside.
  • In the same pan, heat 1-2 teaspoon oil and add green chillies and curry leaves. Fry till they turn crisp and all the moisture evaporates from them.
  • Then add raisins and saute for a few seconds.
  • Add roasted peanuts, cashews, almonds and fried grated raw banana in it and saute for 1-2 minutes.
  • Switch off the flame and add salt, red chilli powder, chaat masala and powdered sugar to it. Mix well.
  • Once it cools down completely, store in an air-tight container.
  • Serve this chivda as a tea-time snack with a hot cup of tea or coffee.
