What can be better than a hot cuppa masala chai or coffee and freshly made homemade snack. These crisp and fresh raw banana wafers (or banana chips) will be a perfect accompaniment for your tea/coffee.
There are mainly 2 types of banana wafers –
- banana wafers prepared from any raw/unripe bananas, seasoned with black pepper powder and salt
- another variety is yellow banana wafers made with unripe nendran bananas and fried in coconut oil.
Today, we are sharing the recipe for simple banana wafers that are topped with black pepper powder and sendha namak. Since we have prepared these wafers for vrat or fasting, we have sprinkled only sendha namak and black pepper powder over the chips, but you may also sprinkle other spices like red chilli powder, chaat masala or any of your favourite herbs.

Raw banana or plantain can be used in a variety of dishes like stir fry, kofta, cutlets, curry, snacks (wafers, sev, chivda namkeen). The list is endless.

How to make Raw Banana Wafers – Step By Step Recipe
- Peel one banana first. Apply and rub sendha namak (or salt) on it.
- Heat oil for deep frying on a medium flame.
- When the oil is hot, slice the banana using a thin slicer directly in hot oil.

- Reduce the flame to low while frying the wafers. Keep adjusting the flame between low and medium. Fry till crisp and light golden in colour.
- Keep separating wafers with a ladle, otherwise, wafers will stick to each other.
- Place them on an absorbent paper to drain excess oil.
- Sprinkle sendha namak (salt) and black pepper powder over the first batch.
- Fry the wafers batch-wise. Do not overcrowd the oil. We have to sprinkle sendha namak (salt) and black pepper powder over them when they are hot, otherwise, wafers won’t be properly coated with spices.
- Now repeat the same steps to fry the remaining batches.
- Store these crispy homemade fresh banana wafers in an air-tight container once they come to room temperature.

Tips & Tricks
- Do not slice the bananas before. We highly recommend that you slice the bananas directly in hot oil, otherwise bananas will darken.
- Fry the wafers batch-wise. Do not overcrowd the oil.
- Heat oil on a high flame and once you add the first batch of wafers to it, reduce the flame to medium to get crisp wafers.
- If you are not comfortable slicing the wafers directly in hot oil, you can slice them and keep in cold water. But if you are following this method, make sure they are completely dry, before adding wafers to hot oil, otherwise oil will splutter.
- Sprinkle black pepper powder & salt on them as soon as you remove them from oil. Do not wait for other wafers to be fried.
- Since we have prepared these wafers for vrat or fasting, we have sprinkled only sendha namak and black pepper powder over the chips, but you may also sprinkle other spices like red chilli powder, chaat masala or any of your favourite herbs.

Ingredients (1 cup = 240 ml)
- 4 raw bananas medium sized
- sendha namak/salt as required
- black pepper powder as required
