How to Blanch Spinach (Palak)

Most of the gravy recipes prepared using spinach (palak) calls for blanching the palak leaves first and then blending them to make puree.

Blanching is a very simple process to preserve the flavours and colour of green vegetables. Make sure you stick to the exact time of blanching and soaking mentioned in the steps, to preserve the colour of the leaves. Otherwise it may happen that the colour of the spinach would become dull.

Before beginning the process of blanching, wash Palak leaves and remove their stems. Chop the leaves. You can also cut the whole bunch into 2 portions.

Steps on how to blanch spinach (palak) leaves  :

1.Add water in a wide pan.Pin

2.Let it come to a boil.Pin

3.Add spinach leaves.

4.With the help of a slotted spoon, immerse them completely in water.

5.Cook for 2 minutes. You will notice that the leaves will slightly change its colour.

6.Remove the leaves in a strainer. Pin

7.Immediately soak the leaves in a bowl of ice cold water for 1 minute. Drain all the excess water.Pin

8.Remove the leaves from water and strain all the excess water from the leaves.Pin

You can use them now as required. You can blend them to a smooth puree, if you want to make any gravy dish with palak puree.

  • 1 bunch spinach (palak) leaves or as required
