Eggless Christmas Plum Cake (no soaking, no alcohol) with step by step photos | no soak Christmas fruit cake 

This is a very simple eggless fruit cake recipe that is super-moist and packed with flavours.

About This Recipe

Usually Christmas Fruit Cake (or you may even call it Christmas Plum Cake) requires soaking of dried fruits and nuts. We have already shared the recipe of Eggless Christmas Fruit Cake with soaking. This recipe requires no soaking and hence it gets ready quickly.

Tips & Variations

You can choose your favourite dried fruits and nuts and also juice in which we soak the fruits. We have used Orange Juice for the recipe, you can use your favourite juice or even rum.

For the mixed fruits, we have used – mixed dried fruits (cranberries, cherries, grapes, prunes, apricots), tutti frutti + raisins, dates/khajur, figs/anjeer. But you can add your favourite nuts and dried fruits.

How to make Eggless Christmas Plum Cake – Step by Step Recipe

  • Place a sieve on a bowl and sift dry ingredients – maida, baking powder, baking soda, corn flour and salt. Keep aside.
  • In a non-stick pan, combine water, brown sugar and mixed chopped dried fruits and nuts. Heat on a medium flame and cook for 5 minutes. Keep stirring in between.

  • Remove from flame and let it cool down for about 5-10 minutes.
  • Then add – oil, all spice powder, cinnamon powder, whisked curd, orange juice and vanilla essence. Mix everything well.

  • Now add all the dry ingredients in 2-3 batches and keep mixing. Mix to get a lump free batter.
  • Grease 8-9 inches baking tin with butter/oil and dust with flour. We are using bundt cake tin. If using regular cake tin, you can also grease with oil/butter and line with parchment paper.
  • Pour the cake batter into the greased tin. Bake the cake in a pre-heated oven at 180 degrees for about 30-35 minutes, or till a toothpick inserted in the center comes out clean. Be alert and check after 30 minutes. Baking time will vary for every Oven/Convection.
  • Remove from the oven insert a toothpick into the middle of the cake. If it comes out clean, cake is ready. If it doesn’t come out clean, bake for a few more minutes.

  • Cover the cake and let it cool in baking tin for about 30 minutes. Invert on a wire rack and let it cool. Keep covered.
  • Slice the cake and enjoy.

Ingredients (1 cup = 240 ml) 

US Customary – Metric

Dry Ingredients

  • 1.5 cups maida/all purpose flour
  • 1.5 teaspoon baking powder
  • ¾ teaspoon baking soda
  • 1 tablespoon corn flour/corn starch
  • pinch of salt

Wet Ingredients

  • 1 cup water
  • ½ cup brown sugar fine granulated
  • 1 cup chopped mixed dried fruits & nuts (cranberries, cherries, grapes, prunes, apricots, any nuts like cashews , almonds, walnuts)
  • ½ cup odorless oil
  • 1 teaspoon all spice powder (or you can use ¼ teaspoon cinnamon powder + ½ teaspoon cloves powder + ¼ teaspoon nutmeg powder)
  • ¼ teaspoon cinnamon powder
  • ¼ cup fresh curd/dahi
  • ½ cup orange juice or you may use grape juice/any other flavoured juice
  • 1 teaspoon vanilla essence
