Crispy Corn Recipe | Barbeque nation style crispy corn recipe | how to make crispy corn – fried corn kernels coated with spices

Crispy corn is one of the most popular starter recipe now-a-days. Sweet and juicy corn kernels are deep-fried and then stir fried with onions, capsicum, soy sauce and basic spices. We would recommend that you use fresh corn kernels for better taste; but you may use frozen corn kernels also.

You can adjust soy sauce and vinegar as per taste. Also, if you don’t want to add vinegar, you may add lemon juice instead.

Make sure you stir-fry fried corn with all the sauces and spices, just before serving. Otherwise it will turn soggy. You can deep-fry corn kernels in advance and keep aside.

Ingredients (1 cup = 240 ml) 

US Customary - Metric
  • 1 cup corn kernels / makai dana boiled
  • 1 tablespoon rice flour / chawal ka atta
  • 1 tablespoon corn flour/corn starch
  • salt to taste
  • few drops of water for binding

To Stir Fry

  • 1.5 teaspoon oil
  • 1 small onion finely chopped
  • ¼ capsicum finely chopped
  • ½ teaspoon soy sauce
  • ½ teaspoon vinegar
  • ¼ teaspoon pepper powder adjust to taste
  • salt to taste

Instructions
 

  • Take boiled corn kernels in a wide bowl and sprinkle corn flour, rice flour and salt over it. Mix well.
  • Mix with your fingers and if need be sprinkle few drops of water and mix. Corn kernels should be properly coated with flour mixture.
  • Heat oil in a frying pan. Add corn into the hot oil and fry on a medium flame till corn becomes crisp and starts floating on the pan.
  • Be careful while frying, as corn may splutter. Fry in batches. Do not overcrowd the pan.
  • Drain on an absorbent paper. Fry all the remaining corn in a similar manner.

To Stir Fry

  • Heat oil in a pan. Add onions and saute for 1-2 minutes.
  • Now add capsicum and stir fry for few seconds.
  • Add soy sauce, vinegar, pepper powder and salt and mix. Adjust the spices and condiments to taste.
  • Now add fried corn and mix properly.
  • Serve immediately and enjoy.
