Sesame Seeds – Make sure you roast the sesame seeds well before crushing them. Roasting will give a very nice flavor and they can be easily crushed if they are roasted well.
Ghee – Use homemade ghee if possible. The quantity of ghee can be varied as per your choice, depending on the loose or hard modaks you prefer. The ghee quantity will also depend on the quality of sesame seeds. So initially add about a tablespoon of ghee while blending, then mix and check the texture. If you feel the mixture is too dry add a little more ghee.
Jaggery – Use soft jaggery if possible. But in case you don’t have that, then you can use powdered jaggery or regular jaggery block. If your jaggery is hard, then grate it or chop it finely before adding it.
