Puran Poli Recipe | How to make puran in microwave

Puran Poli or Vedmi is a well-known sweet from Gujarat and Maharashtra. Gujarati style puran poli is prepared using tuvar dal and Maharashtrian style puran poli is made using chana dal. In this puran poli recipe, we have used both the dals to make this yummy and mouth watering dish even more interesting.

Preparing puran for the puran polis is a very time consuming process. But, being housewives, we also don’t like to spend hours in the kitchen just like everyone else. So, here is an easy recipe of preparing puran in microwave. It will give the same rich aroma and flavours of dals and spices as cooked on flame, but with less efforts.

We have used Samsung 900 watt capacity Microwave Oven. Cooking time will vary according to the capacity of your microwave oven. Adjust the time accordingly.  Keep on stirring the mixture in between, so that it doesn’t get over cooked.

Ingredients (1 cup = 240 ml) 

US Customary - Metric

For The Dough

  • 3/4 cup whole wheat flour/gehun ka atta
  • 3/4 cup maida/all purpose flour + flour for rolling
  • 2 tablespoon oil
  • water for kneading

For The Filling

  • ½ cup chana dal/split bengal gram
  • ½ cup tuvar dal/split pigeon peas
  • 1 cup sugar
  • 2 tablespoon ghee + ghee for cooking
  • 6-8 cashews
  • 6-8 almonds
  • 6-8 pistachio
  • 1/4 teaspoon cardamom/elaichi powder

Instructions
 

For the poli dough

  • In a wide bowl, combine whole wheat flour, maida and oil and knead into a soft dough using enough water. Dough should be soft and smooth.
  • Consistency of the dough should be like that of dough for rotis. Make sure that dough does not become sticky; otherwise it would be difficult to roll out puran polis.
  • Cover and keep aside for about 30 minutes.

For the puran (filling)

  • Wash and soak both the dals for about 15-20 minutes.
  • In a mixer/grinder, combine almonds, cashews and pistachios and grind them to make fine powder.
  • Combine drained tuvar dal and chana dal along with 1 cup water in a pressure cooker, mix well and pressure cook on high flame till 1 whistle. Then reduce the flame and cook for about 10-15 mins.
  • Allow the steam to escape before opening the lid.
  • Let the mixture cool for about 5-10 minutes. Add the dal mixture along with sugar in the grinder/mixer and make fine paste.
  • Transfer this mixture to a microwave safe bowl/container with a lid and add 1 tablespoon ghee to it. Mix well and microwave covered on high power for 10 minutes stirring once or twice in between.
  • After 10 minutes, add the prepared almonds, cashews and pistachio powder to the dal mixture. Mix well and again microwave the mixture and cook covered, on high power for 10 minutes, stirring once or twice in between. Let it stand for 5 minutes.
  • Now, put a spoon in the middle of the bowl and if it stands without support your puran is ready. If not, then microwave for another 3-4 minutes.
  • Pin
  • Once puran is ready, add elaichi powder and 1 tablespoon ghee to it and mix well.
  • Transfer it in a flat dish and let it cool down to room temperature.
  • Once it comes to room temperature, grease your hands with few drops of ghee and make equal sized balls from it.

How to proceed – making the puran poli

  • Take a medium sized ball from the dough and roll out into a circle using maida for rolling.
  • Place puran in the center and fold the edges of the dough over the filling. Pinch the edges together to seal the filling.
  • Flatten the dough and roll again into a circle, using maida for rolling.
  • Place the puran poli on tawa/griddle and allow it to cook on one side.
  • Flip it over and allow it to cook on the other side.
  • Cook over a medium flame till it turns golden brown in colour from both the sides.
  • As soon as you remove it from tawa, apply ghee on puran poli.
  • Repeat with the remaining dough and filling to make more puran polis.
  • Put the puran polis in casserole/insulated container.
  • Enjoy these yummy puran polis warm or at room temperature and serve with khatta (sour) mango/lime/mixed pickle or ghee.

Notes

•We have used 900 watt capacity microwave. Cooking time will vary according to the capacity of your microwave oven. Adjust the time accordingly. We suggest to stir the mixture in between after every 3-4 minutes.
•Instead of using both the flours i.e. whole wheat flour and maida, you can also use only whole wheat flour or only maida for making the dough for puran polis.
•In the same manner, puran (filling) can also be prepared using only chana dal or tuvar daal.
•You can prepare puran (filling) in advance and store it in refrigerator up to a week.
