Date and Apple Kheer

Kheer is an Indian version of pudding made by boiling rice with milk and sugar. It is flavoured with cardamom and saffron to give it a delectable aroma with nuts like cashews, pistachios or almonds added for a crunchy bite. 

But what if we add an innovation to this traditional kheer and try to make it more healthy yet delicious. ..sounds interesting. ..isn’t it?

So we’re presenting a quick and easy kheer recipe that caters to your sweet tooth and which is healthy too…given the nutritional benefits of dates and apples. In this recipe, we have added small quantity of sugar, but you can avoid adding sugar if you want, because natural sweetness of dates and apple, acts as a natural sweetening agent.

Ingredients (1 cup = 240 ml) 

  • 500 ml milk
  • 1 teaspoon ghee
  • ⅓ cup chopped dates
  • 1 medium apple grated
  • 1 tablespoon sugar
  • 5-7 cashews chopped
  • 5-7 almonds chopped

Instructions
 

  • Heat milk in a deep non-stick pan and bring to a boil.
  • Once it boils, add chopped dates and let it simmer for about 7-8 minutes. Then add cashews and almonds and cook for another 2-3 mins. Remove from flame and let it cool down to room temperature.
  • In the meantime, heat ghee in another pan and add grated apples and sugar. Cook this mixture on a medium flame for about 8-9 mins or till moisture evaporates. Remove from flame and let it cool down to room temperature.
  • Once both our mixtures cool down completely, add the apple mixture to milk.
  • Mix well and refrigerate for 2-3 hours before serving.
  • Serve chilled.

Notes

•While adding apple mixture in milk, take care that neither of them is hot. Doing so will curdle the milk and the kheer will get spoilt.
•You can also add walnuts and raisins in the kheer.
•As we mentioned earlier, you can avoid adding sugar if you want. This will give your kheer a mild sweet taste. You can also substitute jaggery or honey in place of sugar.
