
Microwave Kaju Katli Recipe in 2 minutes | quick kaju katli without sugar syrup
Kaju Katli or Kaju Barfi is one of the most loved sweets. But we often prefer not to try making this at home and buy from the shops, because of the preparation of the sugar syrup. Most of the times we are scared that the consistency of sugar syrup won’t be perfect.
So here we are sharing an easy-to-make kaju katli recipe that :
– does not require sugar syrup
– prepared in microwave
– requires just 2 minutes

Yes, this is a no sugar syrup kaju katli (or kaju barfi) recipe that gets ready in just 2 minutes in microwave. We have used Microwave Oven of 900 Watts capacity. Cooking time may vary as per the capacity of the microwave. For the first time, we suggest to keep checking after 30 seconds.

Ingredients (1 cup = 240 ml)
- 1.5 teaspoon ghee + little ghee for kneading cashew dough
- 1 tablespoon milk
- ¼ cup milk powder
- ¼ cup powdered sugar
- ½ cup heaped cashews
Instructions
- In a small mixer jar, take cashews and grind to a fine powder. Grind for a few times until crushed completely. Do not grind for long.
- If you feel powder is a bit grainy you can sieve the cashew powder to get a smooth texture. We have used the powder as it is.
- In a deep microwave safe bowl, combine ghee, milk and milk powder. Mix well and microwave on HIGH power (900 Watts) for 1 minute, stir in-between after 30 seconds. Take out the bowl and stir well.
- Now add cashew powder and powdered sugar and mix. Microwave on MEDIUM power (600 Watts) for 1 minute.
- Take out the mixture, stir and let it cool down a bit. Once it cools down a bit, add little ghee and knead to get a smooth dough-like texture. If you feel mixture is too dry, you may sprinkle little milk.
- Take this cashew dough between butter paper/parchment paper sheets and flatten with hands. Now gently roll the dough with a rolling-pin, adjusting the thickness according to your choice.
- Cut into diamond shape and Enjoy.
