About This Recipe
Eggplants are marinated in basic spices and then shallow fried in mustard oil.
You can even choose to fry these marinated brinjal slices, but since we wanted to prepare begun bhaja with less oil, we have shallow fried brinjal slices.
How to make Baked Begun Bhaja
You can even bake these brinjal slices and prepare this delicious bengali dish. To do that, grease a baking tray with oil, place marinated brinjal slices on it, drizzle some oil and bake at 180 degrees for 10-15 minutes. This way you can prepare your begun bhaja in oven.
We have used rice flour to make this baingan bhaja crispy. But, if you want you may skip adding rice flour and prepare begun bhaja with besan.
For this recipe, you have to use big variety brinjals, the ones which we use for Baingan Bharta. But, for some reason, if you don’t get big variety of purple egglants, you can use any variety of eggplants that is available – long thin variety of brinjal or even small round ones. Of course the look and taste of this recipe will vary slightly, but still you can enjoy this simple and quick recipe.
We have used basic spices but you can modify/twist the recipe to suit your taste.
Step by Step Recipe
- Rinse the eggplant and pat dry with a kitchen towel. Slice the eggplant in round slices.
- In a big bowl combine eggplant slices with all the spice powders – turmeric powder, asafetida, dry mango powder, dhaniya+jeera powder, garam masala and salt and well. Marinate for 10 minutes.
- After 10 minutes add rice flour to marinated brinjal slices and mix well so all the slices are evenly coated. If you observe that there is a bit of moisture in slices, then you can add little extra rice flour.
- Heat about 2 tablespoon oil in a pan.
- Shallow fry the eggplant slices till they are cooked and turn crisp and golden brown on both sides. If you feel that eggplant slices are too dry, then add little more oil.
- Once done, remove the slices and serve hot with phulka or rice and dal.

Ingredients (1 cup = 240 ml)
- 1 large eggplant/baingan/aubergine cut into round slices (thin slices will cook faster as compared to thick slices)
- pinch turmeric powder/haldi
- pinch asafoetida/hing
- 1 teaspoon dry mango powder/amchur powder
- 1 teaspoon dhaniya/coriander seeds powder + jeera/cumin seeds powder
- ¼ teaspoon garam masala
- salt to taste
- 1.5 tablespoon rice flour (adjust as required)
- 2-3 tablespoon mustard oil/any cooking oil for shallow frying
