Curry leaves or kadi patta occupy a special place in every Indian kitchen. If you have bought a small bunch of curry leaves, you might only use one sprig and then you need to store the rest for later use.
If you keep curry leaves in refrigerator for 3-4 days, they will start losing their flavour and will become dry.
So here is an easy and effective way to store curry leaves for months, and that too without worrying about losing their flavour and aroma.

Steps on how to store and preserve curry leaves/kadi patta
1. Separate the leaves from the stems, wash thoroughly and put all the curry leaves on a kitchen towel and pat them dry.
2.Spread leaves on a wide plate, so the remaining moisture evaporates.
3.Heat oil in a wide pan and sauté curry leaves for 4-5 minutes. For 1 cup of leaves, you will need about 1.5-2 teaspoon of oil. First start with 1.5 teaspoon oil, then if you find the leaves too dry you may add more oil. All the leaves should be properly coated with oil.
4.Let it cool down completely. Once cooled, store in an airtight container in refrigerator. Now you can use the leaves as required.
We suggest that you carry out the above process on the same day you bring leaves from the market. Otherwise, the curry leaves may lose their moisture and flavour and the result will not be that effective.
Through this method, leaves will remain fresh and soft with the same aroma and flavours for months.
