Sama ke chawal ki kheer is especially made during fast/vrat. Sama rice gives the same texture and feel as the normal rice. But, they are more healthy as compared to rice

½teaspoonghee¼ teaspoon ghee for brushing pan + ¼ teaspoon ghee for adding to sama ke chawal
¼cupsama ke chawal/barnyard millet
½cupsugar
generous pinch of saffron strands soaked in 1 tablespoon milk
1teaspooncardamom/elaichi powder
½teaspoonjaiphal/nutmeg powder
Instructions
Wash sama ke chawal and soak them in enough water for 15-20 minutes.
Brush a thick bottomed non-stick pan with about ¼ teaspoon ghee. Add milk to it and bring it to a boil. Keep stirring occasionally so that the milk does not stick to the bottom of the pan.
Drain the water from the chawal and add ¼ teaspoon ghee to it and mix.
Once cream separates from milk, stir well and add sama chawal+ghee mixture to milk. Stir well and cook for 5-6 minutes or till chawal gets completely cooked.
Then add sugar and cook for another 2-3 minutes.
Add saffron soaked in milk, stir well and remove from flame.
Transfer kheer to a bowl and add nutmeg powder and cardamom powder. Mix well.
Serve the kheer hot, warm or chilled.
