How to Blanch and Preserve Fresh Green Peas | How to make Frozen Peas at home

Winter is the season for all the fresh green vegetables. Peas enhance the colour, flavour and texture of every dish. During winters, we get fresh peas in abundance in the market at a very reasonable price.

So why not buy peas in bulk during winters and make frozen peas at home, rather than buying frozen peas from the market. It is a simple procedure and with this you can store and preserve peas for months. So lets have a look at this process with step wise pictures.

HOW TO THAW FROZEN PEAS

Steps on how to blanch and preserve fresh green peas :

1.Shell the peas. Do this on the same day you buy fresh peas from the market. Rinse them well with water. Set aside.

2. In a big vessel/pan, bring plenty of water to boil. When water boils, add the peas. Make sure the pan/vessel is big enough for the peas to move and get cooked. If the vessel is not big, then do this process in 2 batches. This process is called Blanching. Blanch the peas till they float on to the top, this will take about 1 1/2 to 2 minutes.

3.At this stage, remove the peas from hot water and put the peas immediately in ice cold water to prevent further cooking.

4.Let it remain in cold water for a few minutes. Drain all the water and spread them on a kitchen towel to dry. Before storing make sure that the peas are completely dry and there is no moisture remaining. Store them in a ziplock bag or any air tight container and keep in the freezer.

How to thaw frozen peas

Take out needed quantity of frozen peas and let them come to room temperature. Then use as required.

Tips to keep in mind while storing peas :

  • As we have pre-cooked the frozen peas, they need less cooking when used later.
  • As soon as the peas floats to top of the vessel, immediately transfer them to the bowl containing cold water.
  • You can store peas for months using this method – remember to store them in the freezer section of the refrigerator.
  • Only take out required quantity from the freezer every time you need some for cooking.
