Add water in pressure cooker, put a stand over it. Arrange a flat plate over it and place raw bananas on it. Close the lid, pressure cook on high flame till 1 whistle, then reduce the flame and cook for 5 minutes.
Let the pressure settle down. Then open the lid and let the bananas cool for about 5 minutes. Once slightly cool, peel and grate the bananas. Don’t keep the bananas for long. It will be very difficult to grate once they are cool.
To grated bananas, add turmeric, salt, hing, red chilli powder. Also add 1 tablespoon water. Mix and mash the bananas with a spoon.
Sieve besan and add to grated bananas. Mix well and form soft and smooth dough. If you feel dough is too dry, add little water.
Place the dough inside the sev maker and close the lid.
Heat oil in a frying pan/kadai and press the sev maker to make sev. Fry on a low-medium flame till it becomes crisp and golden from both sides.
Remove from oil and place on an absorbent paper. Sprinkle chaat masala over it.
