Now you can relish these delicious Dahi vadas during fasting or vrat. The vadas for the vrat ka dahi vada recipe are prepared using sama chawal or vrat ke chawal and potatoes with a few basic ingredients. These are topped with curd, green chutney, and khajur imli chutney.

salted buttermilk/chaas for soaking vadas (take ¼ cup curd and salt, and ½ cup water, whisk)
Instructions
To cook sama rice
Wash sama ke chawal thoroughly. Drain excess water and take the washed sama rice in pressure cooker along with 1 cup water and salt.
Pressure cook for 2 whistles. Once the pressure settles, open the lid of the cooker and take the cooked sama rice in a plate.
To make vada
While the sama rice is still hot, add mashed potato, sendha namak, jeera powder and chopped coriander leaves. Mix everything well and combine to make a smooth dough. It is ok if you are not able to make a dough from the mixture, just make sure everything is combined well and you can easily make balls out of the mixture.
Make medium-sized balls from the mixture. You can prepare about 10 balls from this much quantity. If required, grease hands with little oil while making balls.
Heat oil for frying the vadas. Once oil is hot, put vadas and let it fry on medium heat for 1-2 minutes. Then flip gently and fry from the other side. Fry till it turns light brown.
No need to fry for long, since the mixture is cooked well already, and we just want the outer layer to be crisp. Remove vadas on a plate lined with absorbent paper. Fry the vadas in batches.
Let the vadas cool for about 5-10 minutes. Then soak the vadas in salted buttermilk for 10 minutes. You don’t need to soak the vadas for a longer time since these will turn soggy. So, soak the vadas at the time of serving.
To make sweet dahi (yogurt)
In a bowl, take curd and whisk well. Add powdered sugar and again whisk to get a smooth curd. You can vary the proportion of curd as per your preference. Also, adjust sugar as per taste. Keep the curd in the refrigerator till you want to assemble vadas.
To assemble dahi vada
You can assemble dahi vaha in a big plate and then serve or you can directly make individual servings.
Take soaked vadas in a plate or bowl. Pour sweet yogurt on top. Drizzle vrat ki green chutney and khajur imli chutney over them. You can even sprinkle roasted jeera powder. Serve chilled.

Do not add more water while cooking sama rice, else the rice will turn sticky, and then it will be difficult to make vadas.
If your vada mixture has moisture, then you can add little arrowroot flour or rajgira atta for binding.
No need to fry the vadas for long, since the mixture is cooked well already and we just want the outer layer to be crisp.
We have taken 1 cup of curd and added 1 tablespoon of sugar to it. You can vary the proportion of curd and sugar as per your preference.
Do not soak the vadas in salted buttermilk for long, otherwise, vadas will turn soggy. So, soak the vadas just before serving. Also, you can skip this step if you like crunchy and crisp vadas in your dahi vada.
You can even sprinkle roasted jeera (cumin seeds) powder on dahi vada.
