Basundi is a traditional sweet delicacy prepared from milk and flavoured with cardamom (elaichi) and nutmeg (jaiphal) with nuts added to it for the crunch. This mango basundi recipe is perfect for summers, since we have added mango puree and mango pieces to this lovely traditional sweet.

In a small bowl, combine milk powder and little milk from the total 350 ml that is to be used for the recipe. Whisk well till no lumps remain.
Heat remaining milk in a non-stick/thick bottom pan. Once it boils, reduce the flame and simmer on a medium-low flame for 5 minutes.
Now add 1 tablespoon sugar and let it simmer for another 5 minutes. Keep stirring.
Now add milk powder + milk mixture gradually and mix well. Keep stirring continuously. Let this simmer for another 5 minutes or till milk thickens a bit.
Remove from heat and cool completely.
We have used 2 mangoes for this recipe. We have used puree from 1 mango and chopped the other mango into cubes. You can instead add puree from 2 mangoes also.
Add mango puree and mango pieces. Refrigerate before serving. Garnish with a few more mango cubes and serve chilled.
