Ingredients (1 cup = 240 ml)

(adjust as required)

olive oil
salt to taste
black pepper powder to taste
Instructions
Roughly chop onions, garlic and tomatoes.
In a baking tray, add onions, garlic and tomatoes. Drizzle olive oil and sprinkle salt over them and stir.
Bake at 200 degrees Celsius for about 40-45 minutes till everything is roasted well. Stir after 15-20 minutes.
Remove from oven and let it cool.
Once cooled, transfer to a mixer/blender jar along with all the juices and oil from the tray.
Blend to a smooth puree.
Transfer puree to a pan and bring to a boil. Adjust salt and add pepper powder to taste.
Switch off the flame and serve.
