1-2tablespoon mixed fruit jam (adjust quantity as required)
Instructions
In a wide bowl, take sugar, oil, curd and milk. Whisk well until everything gets combined well.
Now sift and add dry ingredients - whole wheat flour, baking powder, baking soda and salt. Gently stir until everything gets mixed well. Now gradually add water and mix well to get a lump-free and dropping consistency batter. Quantity of water will depend on the type of flour.
Take 1-2 tablespoon mixed fruit jam in a bowl and whisk with a spoon till it becomes smooth and easily spreadable. Keep aside.
Heat a thick bottomed non-stick pan on medium flame and brush it with little oil. Spread oil in the base of the pan so that batter doesn't stick.
Pour the batter and tilt the pan to spread the batter evenly. You can also spread it with a spatula.
Cover and let it cook on a low-medium flame till it leaves the sides of the pan and bubbles appear on top.
Insert a toothpick into the middle. If it comes out clean, base is ready. If it doesn’t come out clean, cook for a few more minutes.
Lightly lift the edges with a spatula and place cooked sponge over a kitchen towel.
Now spread jam over the sponge.
Roll immediately. We need to do this step when roll is hot.
Cover the roll with kitchen towel and place it in refrigerator for atleast 1 hour or till it becomes firm.
