Heat milk in a deep non-stick pan and bring to a boil.
Once it boils, add chopped dates and let it simmer for about 7-8 minutes. Then add cashews and almonds and cook for another 2-3 mins. Remove from flame and let it cool down to room temperature.
In the meantime, heat ghee in another pan and add grated apples and sugar. Cook this mixture on a medium flame for about 8-9 mins or till moisture evaporates. Remove from flame and let it cool down to room temperature.
Once both our mixtures cool down completely, add the apple mixture to milk.
Mix well and refrigerate for 2-3 hours before serving.
Serve chilled.
Notes
•While adding apple mixture in milk, take care that neither of them is hot. Doing so will curdle the milk and the kheer will get spoilt.•You can also add walnuts and raisins in the kheer.•As we mentioned earlier, you can avoid adding sugar if you want. This will give your kheer a mild sweet taste. You can also substitute jaggery or honey in place of sugar.
