Take boiled corn kernels in a wide bowl and sprinkle corn flour, rice flour and salt over it. Mix well.
Mix with your fingers and if need be sprinkle few drops of water and mix. Corn kernels should be properly coated with flour mixture.
Heat oil in a frying pan. Add corn into the hot oil and fry on a medium flame till corn becomes crisp and starts floating on the pan.
Be careful while frying, as corn may splutter. Fry in batches. Do not overcrowd the pan.
Drain on an absorbent paper. Fry all the remaining corn in a similar manner.
To Stir Fry
Heat oil in a pan. Add onions and saute for 1-2 minutes.
Now add capsicum and stir fry for few seconds.
Add soy sauce, vinegar, pepper powder and salt and mix. Adjust the spices and condiments to taste.
Now add fried corn and mix properly.
Serve immediately and enjoy.

Notes
Make sure you stir-fry fried corn with all the sauces and spices, just before serving. Otherwise it will turn soggy. You can deep-fry corn kernels in advance and keep aside.
