Put the peeled garlic in a mixer jar and blend it to a fine paste. Stop occasionally to scrape down the edges to ensure an even consistency. If you find it difficult to blend, add a little oil while blending.
Heat oil on a medium flame. Add prepared garlic paste. Mix well.
Keep stirring and cook for about 10-15 minutes. There should not be any moisture in the garlic paste, and the garlic will turn light brown in colour.
Once done, remove from flame. Let it cool down completely.
Once it gets cooled, add salt and mix.
Store in a glass jar and press it down with the back of a spoon so the paste settles and the oil floats on top.
Keep in the fridge and use as required.

Tips to Keep Garlic Paste Fresh for Longer
Do not cut back on the quantity of oil. The oil acts as a preservative, creating a barrier that helps prevent the garlic from oxidizing and losing its flavor
