Lunch Menu 1 | Gujarati Winter Special Lunch Recipes

Starting our lunch menu series and the first menu is perfectly appropriate for the season. It’s Winter Special Lunch Menu – Bajra Rotla, Baingan Bharta, Mooli (Radish) Salad, Gujarati Kadhi and Vegetable Khichdi.

This is a perfect gujarati winter special thali which you can enjoy for lunch or dinner.

Pre-preparation

  1. Chop vegetables for khichdi. Also, peel onion and garlic. Chop tomato, onion and garlic for baingan bharta.
  2. Wash and soak rice and moong dal for khichdi.
  3. Grate raddish and keep in refrigerator (do not add salt).
  4. Roast the brinjals for baingan bharta.
  5. Once cooled, peel off the skin using a knife. Remove stem and mash the brinjal using a potato masher.

Tips

  1. Do not add salt in mooli salad, otherwise it will leave moisture. Just before serving, add salt and mix well.
  2. For vegetable khichdi, you can add any of your favourite vegetables.
  3. Prepare bajra dough just before you want to make rotlas. Otherwise the dough will become loose and sticky and it would be difficult to roll.
  4. Gujarati recipes have a mild touch of sweetness to them. So for kadhi, we have added jaggery. You can also substitute it for sugar. Also, you can skip adding sweetness if you do not like sweet taste.
